Shrimp in Green Sauce
- 1⁄2 cup chopped Italian parsley
- 1⁄4 cup finely minced yellow onion
- 2 TBL capers chopped
- 2 anchovy filets chopped
- 1⁄2 cup EVOO
- 2 TBL fresh lemon juice
- 1⁄2 tsp grated lemon zest
- Pinch of salt
- 1 lb peeled and cleaned large shrimp
Chop first 4 ingredients until very fine. In a bowl, whisk in olive oil, lemon juice, zest and salt. Grill Shrimp until bright pink, turning once.
Place warm shrimp on top of tomato slices and drizzle with sauce. Have some crusty bread to dip!
